Ahhh, Beignet!

  1. Some things, no matter how good you expect them to be, fill you with a wave of unexpected pleasure at their goodness. Like stepping outside on a late March day to see how warm it is and finding yourself suddenly bathed in warm earth-fragrant breezes and birdsong. At such moments as this an involuntary sigh of pleasure is likely to escape your lips. And such a moment was my all-too-rapid consumption of one of Dana's beignets yesterday. Having taken it to my desk and ignored it for half an hour while working, my mind was elsewhere as I absently lifted the confection to my mouth. But as soon as my teeth sunk into it I was filled with a wave of surprised pleasure at the light, moist texture and the delicate, satisfying flavor. Usually when eating sweets I feel inclined to pause between bites, especially if I don't have any coffee with which to alternate. Not so with this beignet. I could hardly chew the first bite before I was eager for the next, and in an instant it was gone, leaving me wishing for a whole box.
